This is a recipe that has drastically changed throughout the years. Six years ago, I got the idea for sandwich filling sealed in biscuits from a book of backpacking recipes. I originally followed the recipe exactly, making biscuits with whole wheat and soy flour. They were so dense that they earned the name “monsters” with my group of backpacking friends. Every time I’ve made them since, I’ve adjusted the biscuit recipe slightly, making it lighter and adding flavor. Still, the biscuits always seem dry and dense.

I finally had an epiphany this last time – the fundamental flaw in this recipe is that biscuits are used at all. Biscuits are best fresh out of the oven, not carried around in a backpack for three days. I’m guessing the backpacking recipe book developed the recipe with biscuits because they assumed that the average backpacker wasn’t comfortable baking with yeast. But as far as food preparation goes, I am not the average backpacker.

That led to Monsters 2.0 – meat and cheese sealed in my favorite sandwich bread. These were far better than the original Monsters. They stayed sealed better – the biscuit versions tended to pop open. They’re healthier, since biscuits usually contain high amounts of fat. And although yeast bread requires more patience than biscuits, I don’t think this new version involves any more actual effort than the biscuit version.

But the main advantage was, of course, in the eating. We ate these four days after I made them, and they still tasted fresh. And while food always tastes better in the woods, I think Monsters have their place at home as well. You can make a batch, bake them, freeze them, and then have a delicious sandwich ready whenever you need it.

Monsters 2.0 (Stuffed Sandwich Rolls) (bread recipe pieced together from Betty Crocker, Cooks Illustrated, and Peter Reinhart)

Makes 12 sandwiches

I apologize for the vagueness of “sandwich fillings” as an ingredient. You can use whatever you want, although cheese and meat is the obvious choice. I think ham makes the best filling because it keeps well. That being said, I always use turkey because one of my friends who I often make these for doesn’t eat red meat. I don’t know how we get away with eating turkey that hasn’t been refrigerated for days, but no one has ever had a problem with it. As far as how much to use – as much as possible. I’ll update this next time I make these with something more precise, but I never use enough filling. Definitely use more than you see in the photos.

3-3½ cups (15-17½ ounces) unbleached flour, plus extra for work surface
1½ teaspoons table salt
1 cup water, warm (110 degrees)
1 egg
2 tablespoons vegetable oil or unsalted butter, melted
¼ cup (1.75 ounces) granulated sugar or 3 tablespoons honey
1 package (2¼ teaspoons) rapid-rise yeast (also called instant)
Sandwich fillings (see note above)
2 tablespoons milk

1. Adjust an oven rack to middle position and heat the oven to 200 degrees. Once the oven temperature reaches 200 degrees, maintain heat for 10 minutes, then turn off the oven.

2. Mix flour, salt, and yeast in the bowl of a standing mixer fitted with the dough hook. Mix water, egg, butter, and honey in 1-quart Pyrex liquid measuring cup. Turn machine to low and slowly add liquid. When dough comes together, increase speed to medium (setting number 4 on a KitchenAid mixer) and mix until dough is smooth and satiny, stopping machine two or three times to scrape dough from hook if necessary, about 10 minutes. Turn dough onto lightly floured work surface; knead to form smooth, round ball, about 15 seconds.

3. Place dough in very lightly oiled bowl, rubbing dough around bowl to lightly coat. Cover bowl with plastic wrap; place in warm oven until dough doubles in size, 40 to 50 minutes.

4. Divide the dough into 12 equal pieces. Form the pieces into smooth balls. Cover the balls with plastic wrap and allow them to rest for 10 minutes.

5. On a lightly floured work surface, roll out each ball to form an oval ⅛-inch thick. Layer sandwich filling on one side of each oval, leaving a ½-inch border. Fold dough over filling, stretching it a bit if absolutely necessary. Seal the edges with the tines of a fork.

6. Cover the rolls loosely with plastic wrap. Let rise until puffy, 30-45 minutes.

7. Heat oven to 350F. Use the tines of a fork to re-seal the edges of the rolls. Using a pastry brush, brush the rolls with the milk.

8. Bake until rolls are golden, 25-40 minutes. Transfer the rolls to a cooling rack. Wait at least 30 minutes before serving.

This is the second Tuesdays with Dorie recipe in a row that I didn’t even know what it was before I made it. I had to wikipedia it to find out if I was supposed to serve it as dessert or what. I ended up serving it with some healthy omelets for breakfast.

This was not the most popular recipe we’ve made in the group. It seems like a lot of people had problems with the consistency of the dough and its rising times, and I’m wondering if some of those problems can be attributed to unfamiliarity working with yeast. A few people were surprised by how much time the recipe required, but almost all of that is spent waiting for the dough to rise. I didn’t think this was any more effort than any other yeast bread recipe.

I didn’t have any problems putting the recipe together. I can’t say I followed the directions exactly – I kept forgetting about it after I put it in the refrigerator, even though I was supposed to punch it down every once in a while. But I find that yeast breads are pretty forgiving.

I liked the texture of the bread quite a bit. It was very tender and light. The raisins were a nice addition. I wonder if it would be tasty to soak the raisins in rum instead of hot water to plump them? Or is a rum soak inappropriate for something that’s generally served for breakfast? (And do I care if it is? Probably not.)

The only problem I had with the kugelhopf is that it tasted totally flat. I was actually wondering if I had forgotten to add the salt, but now I see that quite a few people thought the bread was bland. Looking at the recipe, I can why – ¼ teaspoon of salt is a not a lot for a loaf this size. I would expect to use about three times that amount. I really need to be more careful with the salt amounts in Dorie’s recipes – I find that she tends to use less than I prefer. It’s just hard not to trust the professional in these matters.

Overall though, I enjoyed the little kugelhopf rolls, and I’m a better baker for knowing what the heck kugelhopf is. You can find the recipe on Yolanda’s blog.

peter reinhart’s pizza

This makes two Daring Baker recipes in a row that were already on my mental to-do list. It’s perfect because otherwise who knows when I actually would have gotten around to making them. I would have been making my standard pizza recipe, too lazy to try this new one which I’ve heard great things about, and wondering if mine is as good as it gets.

I’ve been using Cooks Illustrated’s crust recipe for years, which has the same ingredients as Peter Reinhart’s in only slightly different proportions. I started adding some sugar and white wine to it after Deb discussed it, and I found that my crust was a little more light, crisp and bubbly, which I liked.

But the CI recipe hasn’t always been perfect for me. Lately when I try to stretch it out, it has a tendency to rip, even when the dough is warm enough and risen completely. It’s not an elasticity issue either – it’s not like the dough is bouncing back on itself when I try to stretch it out.

One of the keys to Reinhart’s recipe is that he uses very cold water in the dough, then refrigerates the dough immediately after kneading, similar to his pain a l’ancienne. To be honest, I usually do this – albeit somewhat half-assed – with CI’s recipe, just because it’s more convenient for me to make the dough the night before I want it for dinner.

The biggest difference between the two recipes is that Reinhart mixes and kneads his dough with a stand mixer, while CI uses a food processor.  Despite the similarity between CI’s and Reinhart’s recipes, their outcomes were relatively distinct. Reinhart’s dough did not rip – it seemed capable of stretching to infinite lengths. Rosa, this month’s host, requested that we take a photo of the dough being tossed and spun, but this dough was so floppy, there’s no way I was going to chance throwing it around the kitchen.

Baked, the pizza wasn’t very different from my normal recipe. In fact, Dave didn’t notice that I had changed it. However, it wasn’t quite as crispy, and it wasn’t substantial enough to hold up my toppings, even though I don’t think I overloaded it. I think I might have gone overboard in making it thin.

I think in the future, I’ll stick with the ingredient proportions from CI’s recipe, adding the the sugar and white wine. However, I’ll use Reinhart’s method of preparing the dough with the stand mixer and using refrigerated ingredients. Hopefully this way I’ll get the best of both worlds. It’ll be a while before I have a chance to try it though, because right now, I have a half recipe of both doughs in my freezer.

Basic Pizza Dough (adapted from The Bread Baker’s Apprentice by Peter Reinhart)

Makes 6 pizza crusts, about 9-12 inches/23-30 cm in diameter.

4½ cups flour (bread, high-gluten, or all-purpose), chilled
1¾ teaspoons salt
1 teaspoon instant yeast
¼ cup olive oil or vegetable oil (both optional, but it’s better with)
1¾ cups water, ice cold (40 degrees)
1 tablespoon sugar
cornmeal for dusting

1. Mix together the flour, salt and instant yeast in a big bowl or stand mixer. Add the oil, sugar and cold water and mix well (spoon or paddle attachment) to form a sticky ball of dough. On a clean surface, knead for about 5-7 minutes, until the dough is smooth. If it is too wet, add a little flour and if it is too dry add 1 or 2 teaspoons extra water. If you are using an electric mixer, switch to the dough hook and mix on medium speed for the same amount of time. The dough should clear the sides of the bowl but stick to the bottom of the bowl. If the dough is too wet, sprinkle in a little more flour. If it clears the bottom of the bowl, dribble in a teaspoon or two of cold water. The finished dough should be springy, elastic, and sticky, not just tacky, and register 50°-55° F/10°-13° C.

2. Flour a work surface or counter. Line a jelly pan with baking paper/parchment. Lightly oil the paper. Cut the dough into 4-6 equal pieces. Sprinkle some flour over the dough. Make sure your hands are dry and then flour them. Gently round each piece into a ball. Transfer the dough balls to the lined jelly pan and mist them generously with spray oil and cover with plastic wrap.

3. Put the pan into the refrigerator and let the dough rest overnight or for up to thee days. NOTE: You can store the dough balls in a freezer bag if you want to save some of the dough for any future baking. In that case, pour some oil (a few tablespooons only) in a medium bowl and dip each dough ball into the oil, so that it is completely covered in oil. Then put each ball into a separate bag. Store the bags in the freezer for no longer than 3 months. The day before you plan to make pizza, remember to transfer the dough balls from the freezer to the refrigerator.

4. On the day you plan to eat pizza, exactly 2 hours before you make it, remove the desired number of dough balls from the refrigerator. Dust the counter with flour and spray lightly with oil. Press the dough into disks about 1/2 inch/1.3 cm thick and 5 inches/12.7 cm in diameter. Sprinkle with flour and mist with oil. Loosely cover the dough rounds with plastic wrap and then allow to rest for 2 hours.

5. At least 45 minutes before making the pizza, place a baking stone on the lower third of the oven. Preheat the oven as hot as possible (500° F/260° C). If you do not have a baking stone, then use the back of a jelly pan. Do not preheat the pan.

6. Generously sprinkle the back of a jelly pan with semolina/durum flour or cornmeal. Take 1 piece and lay the dough across your fists in a very delicate way and carefully stretch it by bouncing it in a circular motion on your hands, and by giving it a little stretch with each bounce. Once the dough has expanded outward, move to a full toss. Make only one pizza at a time. During the tossing process, if the dough tends to stick to your hands, lay it down on the floured counter and reflour your hands, then continue the tossing and shaping. In case you would be having trouble tossing the dough or if the dough never wants to expand and always springs back, let it rest for approximately 5-20 minutes in order for the gluten to relax fully,then try again.You can also resort to using a rolling pin.

7. When the dough has the shape you want, place it on the back of the jelly pan, making sure there is enough semolina/durum flour or cornmeal to allow it to slide and not stick to the pan. Lightly top it with sweet or savory toppings of your choice.

8. Slide the garnished pizza onto the stone in the oven or bake directly on the jelly pan. Close the door and bake for about 5-8 minutes.

pumpkin muffins

I’ve been on the lookout for a pumpkin quick bread recipe for a couple of years. I like quick breads to have some textural contrast with add-ins, but I couldn’t think of anything that seemed to fit with the flavors of the pumpkin. Of course Dorie could, as Kelly’s choice for this week’s TWD recipe made evident.

Dorie adds raisins and walnuts (or pecans) to her pumpkin muffins. Like I almost always do, I replaced the raisins with something else; in this case, dried cranberries. I wasn’t sure if the flavors would get along – they’re both common fall ingredients, but I don’t often see them together. I topped the muffins with pumpkin seeds instead of sunflower seeds. I’m not sure why Dorie calls for sunflower seeds; pumpkin seeds seem so perfect for these muffins.

The muffins were good. The walnuts and dried cranberries were fine as additions. However, shortly after I made them, one of my friends told me about a pumpkin muffin recipe she makes that has a lot of ginger in it, and then it occurred to me that the perfect add-in for pumpkin muffins is crystallized ginger. Now I’m looking forward to trying this combination.

pain ordinaire

I like all kinds of breads. I keep a loaf of sweet tender country crust bread in my freezer to use for sandwiches and toast (with cheddar and Marmite, yum), and of course I love a really great loaf of artisanal French or Italian bread. This bread is neither of those. It’s just a very simple loaf of regular bread – no added flavoring ingredients like sugar or butter, and no overnight pre-ferment to coax the natural sweetness out of the flour. It’s exactly what the name implies – ordinary bread.

And that’s okay. Because ordinary bread, eaten fresh from the oven or toasted and made into panzanella, can certainly be extraordinary.

This bread is as flavorful as a rustic bread that’s ready in just a few hours can be. Although there is no overnight pre-ferment, there is a 20-minute “sponge” rest that improves flavor and texture. Other than that step, this is a very standard bread recipe – mix, knead, rise, shape, rise, bake, cool.

While I love Eric Treuille and Ursula Ferrigno’s Ultimate Bread, especially for the beautiful photos that inspire me to get baking, their methods differ from what I’m used to, and frankly, I like my normal method better. For example, Treuille and Ferrigno usually recommend adding all of the flour and then adding small amounts of liquid to get the correct consistency. Most recipes instruct the reverse – add all of the liquid and then add flour until the right consistency is achieved. I prefer the latter method because I find that flour is easier to incorporate into the dough than liquid is.

If you want some very good bread with dinner and you don’t want to think about it days in advance, this recipe is perfect. I think it is also a great recipe for an inexperienced bread baker. There’s nothing complicated here, but the end result shows how great homemade bread can be.

Update 3/16/10: I’ve successfully used this method to make this bread whole wheat.  Complete instructions for adapting this recipe are included in that post.

Pain Ordinaire (adapted from Ultimate Bread, by Eric Treuille and Ursula Ferrigno)

Feel free to play with the recipe. Either bread flour (which I think is what I used) or all-purpose will work, and you can substitute about a quarter of that with whole wheat or even rye flour. You can replace half of the water with buttermilk or milk. You can make the loaf any shape you want. It fits in a loaf pan and it can be made into rolls.

3½ cups (17½ ounces) unbleached flour
2 teaspoons instant yeast
1⅓ cup water, room temperature
1½ teaspoon salt

1. Stir the yeast into 1¾ cup (8¾ ounces) of the flour in the bowl of a stand mixer. Add all of the water, stirring until it forms a smooth, sticky batter (like pancake batter). Cover the bowl with plastic wrap and leave at room temperature for approximately 20 minutes, or until the mixture becomes frothy, loose, and slightly expanded.

2. Add the remaining flour and the salt to the mixture. Stir (or mix on medium-low speed with the hook attachment) for 1 minute, or until the ingredients form a ball.

3. Lightly dust the counter with flour, transfer the dough to the counter, and begin kneading (or mix on medium speed with the dough hook). Knead for about 10 minutes (6 minutes by machine), adding flour, if needed, to make a dough that is smooth, shiny, and elastic.

4. Lightly oil a large bowl and transfer the dough to the bowl, rolling it to coat with the oil. Cover the bowl with plastic wrap. Let rise until doubled in size, about 1½ to 2 hours. Press to deflate, then let rest for 10 minutes.

5. Gently pat the dough into a rough rectangle. Fold the bottom third of dough, letter style, up to the center and press to seal, creasing surface tension on the outer edge. Fold the remaining dough over the top and use the edge of your hand to seal the seam closed and to increase the surface tension all over. Press evenly with the palms of both hands and roll the dough backward and forward until it is 14 inches in length. Line a sheet pan with baking parchment. Place the loaf on the pan and lightly dust with flour. Cover loosely with plastic wrap.

6. Proof at room temperature for about 1 hour, or until the loaves have grown to about twice their original size.

7. About half an hour into the second rise, place a baking stone* on the bottom rack of the oven and preheat the oven to 500 degrees.

8. Using a very sharp knife or a serrated bread knife, cut 5 diagonal slashes, each about ¼ to ½-inch deep, across the top of the loaf. (Alternatively, cut one long slash that extends for the length of the loaf.)

9. Transfer the dough on the parchment paper to a peel or the back of a sheet pan. Transfer the dough to the baking stone. Close the oven and reduce the temperature to 450 degrees. Bake until golden brown and the temperature is at least 200 degrees** at the center.

10. Transfer the loaves to a cooling rack and cool for at least 1 hour before slicing and serving.

*If you don’t have a baking stone, simply bake the loaf on a baking sheet at 425 degrees for 45 minutes.

**If you don’t have an instant-read thermometer, tap the bottom of the hot baked loaf. It should sound hollow when the bread is done baking.

lavash crackers (daring bakers)

This is the first Daring Baker recipe that has not only been from a cookbook I own, but was a recipe that I had planned to make soon anyway. Since football season started a few weeks ago, I’ve made Sunday into a snack day instead of serving an actual meal, which gives me a chance to play around with appetizer and dip recipes that I normally can’t (healthily) work into our routine.

The recipe itself was pretty simple. This is a rare recipe for Peter Reinhart in that it doesn’t require a pre-ferment, so the recipe can be completed in one day. The dough was easy to work with. I rolled it out right on my silicone baking mat, and then just moved the mat to a baking pan to bake it, so I never had to transfer just the sheet of dough.

I think Reinhart’s directions on rolling out the dough are off. I rolled the dough out to exactly the dimensions he recommends, but my “crackers” ended up far too thick. Reinhart refers to the rolled-out dough as “paper-thin” at one point, and mine certainly wasn’t. In the future, I’ll roll the dough out possibly twice as thin, so they’re more like crackers and less like little toasts.

I cheated on the dip. After I made it, I saw in the rules that we were supposed to make something that was gluten-free and vegan, but my pesto dip is based on goat cheese. But it’s so good! I have no regrets on breaking the rules if I get something so tasty out of it.

This challenge was a fun one – I always enjoy making yeast breads, and as I said, I’d been interested in this recipe for a while. The hosts this month, Natalie and Shel, also give directions for a gluten-free version, which I may try for my gluten-intolerant grandmother next time I see her. I’m always on the lookout for good gluten-free recipes.

Lavash Crackers (from Peter Reinhart’s The Bread Baker’s Apprentice)

Makes 1 sheet pan of crackers

1½ cups (6.75 ounces) unbleached bread flour
½ tsp salt
½ tsp instant yeast
1 tablespoons sugar
1 tablespoon vegetable oil
⅓ to ½ cup + 2 tablespoons (3 to 4 ounces) water, at room temperature
Poppy seeds, sesame seeds, paprika, cumin seeds, caraway seeds, or kosher salt for toppings

1. In a mixing bowl, stir together the flour, salt yeast, sugar, oil, and just enough water to bring everything together into a ball. You may not need the full ½ cup + 2 tablespoons of water, but be prepared to use it all if needed.

2. Sprinkle some flour on the counter and transfer the dough to the counter. Knead for about 10 minutes, or until the ingredients are evenly distributed. The dough should pass the windowpane test and register 77 degrees to 81 degrees Fahrenheit. The dough should be firmer than French bread dough, but not quite as firm as bagel dough (what I call medium-firm dough), satiny to the touch, not tacky, and supple enough to stretch when pulled. Lightly oil a bowl and transfer the dough to the bowl, rolling it around to coat it with oil. Cover the bowl with plastic wrap.

3. Ferment at room temperature for 90 minutes, or until the dough doubles in size. (You can also retard the dough overnight in the refrigerator immediately after kneading or mixing).

4. Mist the counter lightly with spray oil and transfer the dough to the counter. Press the dough into a square with your hand and dust the top of the dough lightly with flour. Roll it out with a rolling pin into a paper thin sheet about 15 inches by 12 inches. You may have to stop from time to time so that the gluten can relax. At these times, lift the dough from the counter and wave it a little, and then lay it back down. Cover it with a towel or plastic wrap while it relaxes. When it is the desired thinness, let the dough relax for 5 minutes. Line a sheet pan with baking parchment. Carefully lift the sheet of dough and lay it on the parchment. If it overlaps the edge of the pan, snip off the excess with scissors.

5. Preheat the oven to 350 degrees Fahrenheit with the oven rack on the middle shelf. Mist the top of the dough with water and sprinkle a covering of seeds or spices on the dough (such as alternating rows of poppy seeds, sesame seeds, paprika, cumin seeds, caraway seeds, kosher or pretzel salt, etc.) Be careful with spices and salt – a little goes a long way. If you want to precut the cracker, use a pizza cutter (rolling blade) and cut diamonds or rectangles in the dough. You do not need to separate the pieces, as they will snap apart after baking. If you want to make shards, bake the sheet of dough without cutting it first.

5. Bake for 15 to 20 minutes, or until the crackers begin to brown evenly across the top (the time will depend on how thinly and evenly you rolled the dough).

6. When the crackers are baked, remove the pan from the oven and let them cool in the pan for about 10 minutes. You can then snap them apart or snap off shards and serve.

Pesto Goat Cheese Spread (from Gourmet September 2002, but really epicurious.com)

4 ounces soft mild goat cheese at room temperature
2 ounces cream cheese at room temperature
¼ cup pesto

Stir together all ingredients with salt and pepper to taste until smooth.

crawfish, roasted tomato, and farmers cheese pizza

I make pizza probably every other week, always on the weekend. About half of the time I make a traditional pizza with tomato sauce and mozzarella cheese. The other half varies – in the past few months, I’ve made shrimp scampi pizza, caramelized onion and Gruyere pizza, and spinach ricotta pizza. When I tell Dave that we’re having pizza for dinner, he always asks hopefully, “Normal pizza?”

Not this time. I’ve had crawfish tails in my freezer for months. I used a portion of the package for a recipe which I will, eventually, blog about, but I had no plans for the remainder. Cooks Illustrated’s recipe for pizza with shrimp, farmers cheese, and roasted tomatoes seemed like a great place to use some of that crawfish in place of the shrimp. Something about that combination of ingredients seemed very American to me.

I really only used CI’s recipe as a basic guide. Their recipe is developed to grill the pizza, which I wouldn’t be doing. Since I wasn’t sure if the crust recipe they provided was specially designed for grilling, I opted to use my favorite regular pizza dough recipe, tweaked to incorporate the seasonings CI uses in their recipe.  I substituted crawfish for the shrimp and used far less than they call for, and I used Deb’s recipe for slow-roasted tomatoes instead of CI’s method for roasting tomatoes

Overall, it was the same basic ingredients CI called for, but combined a little differently. It was my first time using farmers cheese, and I really liked it. The slow-roasted tomatoes, oh my gosh. I made about twice as many as I needed for the pizza, and I ate the others plain. I was greedy and barely shared with Dave.

The only step I wasn’t quite sure how to adapt was the actual grilling of the pizza to baking them on a hot pizza stone. Since all of the toppings were already cooked, I didn’t want to risk overcooking them by putting them into a 500 degree over for 8 minutes. I ended up simply putting the untopped dough in the oven for a few minutes, then taking it out, adding the toppings, and putting it back in until the crust was spotty browned like I like it. It wasn’t the perfect solution – I should have poked the dough with a fork before putting it on the hot stone, because it puffed up like a pita.

Dave and I both really liked the pizza. I should have used more cheese, but when is that not the case? (The recipe below is adjusted for the amount of cheese I wish I would have used.)  Dave thinks shrimp would have been better than crawfish, but I don’t really agree. The only problem I had was that there was that the toppings, especially the crawfish, kept falling off the pizza. More cheese might have acted like glue to hold the toppings on as well. Overall, this was my favorite of the non-traditional pizzas I’ve made recently, and a great way to use up some of that tasty crawfish.

Crawfish, Roasted Tomato, and Farmers Cheese Pizza (substantially adapted from Cooks Illustrated; Roasted Tomatoes from Smitten Kitchen)

Serves 6 as a main course

Garlic-Herb Pizza Crust:
2 tablespoons virgin olive oil
1 tablespoon minced garlic
½ teaspoon herbes de Provence
1 teaspoon ground black pepper
1¾ cups water divided, warm
2¼ teaspoons instant yeast (1 envelope)
4 cups bread flour
1½ teaspoons table salt

Roasted Tomatoes
24 cherry tomatoes (small), halved lengthwise
1 tablespoon virgin olive oil
Table salt and ground black pepper

Crawfish or (Shrimp)
1 pound crawfish tails or medium-sized shrimp
1½ tablespoons olive oil, plus additional for drizzling
½ teaspoon hot chili powder
⅛ teaspoon cayenne pepper
Table salt and ground black pepper

Toppings
12 ounces farmers cheese, crumbled
⅔ cup packed cilantro leaves, minced
⅔ cup packed fresh parsley, minced

1. For the crust: Heat olive oil in a small skillet; add next 3 ingredients and cook over low heat until garlic softens, about 5 minutes. Cool.

2. Mix flour, yeast, and salt in a food processor. Add water and herb oil to yeast mixture. With machine on, gradually pour liquid into dry ingredients; process until a rough ball forms. If dough is too sticky or dry, add flour or water, 1 tablespoon at a time. Let dough rest for 5 minutes, then continue to process until dough is smooth, about 35 seconds.

3. Knead dough by hand a few seconds to form smooth, round ball; place in a lightly oiled bowl, cover with a damp cloth and let rise until dough doubles in size, about 2 hours.

4. For the roasted tomatoes: Preheat oven to 225°F. Halve each tomato crosswise and arrange on a parchment-lined baking sheet. Drizzle with olive oil, just enough to make the tomatoes glisten. Sprinkle with salt and pepper. Bake the tomatoes in the oven for about three hours. You want the tomatoes to be shriveled and dry, but with a little juice left inside. (The tomatoes can be set aside at room temperature up to 6 hours ahead.)

5. Place a pizza stone on the lowest oven rack and heat oven to 500 degrees. Punch dough down and divide into 3 equal pieces. Roll each portion to form a smooth, round ball. Place the balls on a lightly floured surface, cover with a damp cloth, and let rest 10-30 minutes.

6. For the crawfish/shrimp: Heat a medium-sized skillet over high heat. Toss crawfish with 1½ tablespoons oil, chili powder, cayenne, and salt and pepper. Cook crawfish in hot skillet, stirring occasionally, for 3-4 minutes, until the tails curl. (Shrimp may need an additional 2-3 minutes, depending on their size; cook until opaque.)

7. Stretch and press a ball of dough until it reaches a diameter of 9-11 inches. If the dough is very resistant to being stretched, let it rest 5 minutes and then try again.

8. Brush the circle of dough with olive oil, then stab it with a fork 10-12 times. Transfer the dough to a pizza peel dusted with cornmeal. Slide the dough onto the heated stone. Bake until the crust edges begin to brown, 5-8 minutes. Remove the pizza from the oven, add ⅓ of all toppings, and return to hot stone until crust is crisp and browned, 3-4 minutes. Cut into wedges and serve immediately. Repeat steps 7 and 8 with remaining dough and toppings.

fruit bruschetta

Lately I’ve been on a major breakfast kick. It seems like I want to try something different every weekend morning. This fruit bruschetta is definitely different – it doesn’t even fit into my simple sweet versus savory categorization of breakfasts. (Obviously it’s a sweet option, but it isn’t the standard pancakes/waffles/French toast offering.)

The bruschetta are easy to make. Toast and butter bread, sprinkle with cinnamon sugar and broil until the sugar caramelizes, top with fruit and yogurt. And except for the bit of sugar and butter, it’s actually healthy. As much as Dave loves the croque-madame, I think if it was up to him, we’d eat breakfasts like this far more often.

I used the last loaf of pain a l’ancienne for the brushetta. I noted when I made the pain a l’ancienne that the crust was too thick, and that, combined with maybe overtoasting it a bit, caused my bruschetta to be way too crispy. That’s an understatement – I worried for my teeth, eating this. But if you’re using normal bread, I’m sure you won’t have the same problem.

I think these would be perfect for a brunch. They can sit at room temperature for a while without a problem, and they’re easy finger food. They’re simple, they’re fairly healthy, and they’re certainly an original option.

Peach, Strawberry, and Banana Bruschetta (from Gourmet August 1994, but really epicurious.com)

Bridget note: I used vanilla yogurt to drizzle over the toasts instead of plain yogurt, so I skipped the honey and sprinkled lemon zest over the yogurt instead.

Makes 16 bruschetta

16 ½-inch-thick slices crusty Italian or French bread
2 tablespoons melted unsalted butter
1½ tablespoons sugar
1½ tablespoons cinnamon, or to taste
1 peach, peeled, pitted, and cut into fine dice
½ banana, cut into fine dice
8 large strawberries, cut into fine dice
3 to 4 tablespoons plain yogurt
honey for drizzling

Preheat oven to 375°F.

Arrange bread slices in one layer in a shallow baking pan and bake in middle of oven until golden, about 10 minutes. Brush toasts with butter on one side. Toasts may be made 1 week ahead and kept in an airtight container.

In a small bowl stir together 1 tablespoon sugar and cinnamon and sprinkle evenly over buttered side of each toast. Broil toast about 5 inches from heat under preheated broiler 30 seconds, or until tops are bubbling, and cool.

In a bowl stir together fruit and remaining ½ tablespoon sugar and mound about 1 tablespoon on each toast. Top each toast with about 1 teaspoon yogurt and drizzle with honey.

banana coconut muffins

Dave’s been eating muffins everyday, which is good for me because it gives me an actual reason to bake. Plus, I buy enough bananas for Dave and I to each eat one per day, but I’m so freakin’ bored of bananas that I never eat mine. I eat batter or dough instead. Did I mention that I bake a lot?

If I’m going to be making banana muffins constantly, I figure I might as well make some interesting ones. The recipe for these banana coconut muffins has a lot of great reviews on epicurious, which is always a good sign. Also, Dave likes coconut more than I do, and since I do all of the cooking for us, I don’t think he gets to eat it as often as he’d like.

I was really happy with the muffins. I can never resist eating one after I bake them, even though I’m making them for Dave to bring to work. They were light and tender and flavorful, with a good balance of banana and coconut flavor. Some of the coconut shreds on top of the muffin fell off, so next time I’ll pat those into the batter a bit. Other than that detail, these were perfect.

Banana Coconut Muffins (from epicurious.com)

Makes 8

1¼ cups (6.25 ounces) all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
2 very ripe bananas, mashed (¾ cup)
1 stick (½ cup) unsalted butter, melted
⅔ cup (4.65 ounces) sugar
1 large egg
½ teaspoon vanilla
¾ cup sweetened flaked coconut

Put oven rack in middle position and preheat oven to 375°F. Line muffin cups with liners.

Whisk together flour, baking powder, and salt in a bowl. Whisk together bananas, butter, sugar, egg, vanilla, and ½ cup coconut in a large bowl until combined well, then fold in flour mixture until flour is just moistened.

Divide batter among lined muffin cups and sprinkle with remaining ¼ cup coconut. Bake until muffins are puffed and golden, about 25 minutes. Transfer muffins to a rack and cool slightly.

pain a l’ancienne

Cooks Illustrated’s Chicken with 40 Cloves of Garlic recipe is cooked through a combination of roasting and braising, which keeps the meat moist and the skin crisp. Once the chicken is cooked, the braising liquid is made into a delicious garlicky herbed sauce. I supposed you could make some creamy rich mashed potatoes to serve with the sauce, but I love to dip bits of delicious artisan breads in it. For this meal, I think you need the absolutely best bread you can get. I haven’t found a fantastic bakery in my area, so that means I have to make it myself.

I know this is supposed to be the Dinner Party Menu Ode to Cooks Illustrated, but I strayed from them for the bread. They do have a great recipe for baguettes that you should check out if you have access to it, but I wanted to try Peter Reinhart’s pain a l’ancienne. Reinhart loves this recipe – he discusses it in length in the introduction before providing his recipe later in the book. I had made it once before with mixed results.

The recipe is actually less work than many other bread recipes, especially flavorful artisanal breads. Like all of Reinhart’s recipes, it’s developed to squeeze out as much flavor as possible from the simplest list of ingredients (flour, salt, yeast, water). Instead of requiring a pre-ferment, which basically means that the dough has to be made twice, pain a l’ancienne needs only be mixed and kneaded once, and there’s not even any proofing to worry about.

The key is that the dough is made with ice water and then immediately refrigerated overnight. The yeast slowly wakes up and does its thing, making its way through the flour and releasing every bit of flavor possible. All that’s left to do the day of baking is give the dough a chance to warm up and rise some more, mold the very wet dough into some semblance of loaves, and bake.

The result is some of the best bread I’ve ever made. I can’t think of how to describe the smell, but it’s so much more than homemade bread. The flavor matches the rich smell, and the crumb is chewy and tender.

The problem I’m having with the bread is the crust. The first time I made this recipe, which was a year or two ago, I followed Reinhart’s instructions to sprinkle the parchment paper with cornmeal before putting my dough on it. The result was a bottom crust ingrained with cornmeal. It wasn’t like pizza, where you don’t even notice the few grains; the wet dough had incorporated a thick layer of cornmeal. This time, I skipped the cornmeal, which is unnecessary anyway since the bread is baked on parchment paper. However, the crust was still far too thick, much thicker than is shown in Reinhart’s photo. It’s a straightforward problem to fix by adjusting the baking time and temperatures, and I put notes in the recipe instructions for how I’ll cook it next time.

With that small problem worked out, this is a truly fantastic bread recipe. The flavor is just about unbeatable. And, again – it’s less work than other recipes. You can’t go wrong.

Pain a l’Ancienne (from Peter Reinhart’s Bread Baker’s Apprentice)

Bridget note: The only alteration I made to the recipe was to skip the cornmeal Reinhart calls for. I did put a note at the bottom about the cooking temperature and time, in order to correct the crust problem I had.

Yields 6 baguettes

6 cups (27 ounces) unbleached bread flour
2¼ teaspoons salt
1¾ teaspoons instant yeast
2¼ cups plus 2 tablespoon to 3 cups ice-cold (19 to 24 ounces) water

1. Combine the flour, salt, yeast and 19 ounces water in the bowl of the electric mixer with the paddle attachment and mix for 2 minutes on low speed. Switch to the dough hook and mix for 5 to 6 minutes on medium speed. The dough should be sticky on the bottom of the bowl but it should release from the sides of the bowl. If not, sprinkle in a small amount of flour until this occurs (or dribble in water if the dough seems too stiff and clears the bottom as well as the sides of the bowl). Lightly oil a large bowl and immediately transfer the dough with a spatula or bowl scraper dipped in water into the bowl. Mist the top of the dough with spray oil and cover the bowl with plastic wrap.

2. Immediately place the bowl in the refrigerator and chill overnight, to retard fermentation.

3. The next day, check the dough to see if it has risen in the refrigerator. It will probably be partially risen but not doubled in size (the amount of rise will depend on how cold the refrigerator is and how often the door was opened). Leave the bowl of dough out at room temperature for about 2 to 3 hours (or longer if necessary) to allow the dough to wake up, lose its chill, and continue fermenting.

4. When the dough has doubled from its original prerefrigerated size, liberally sprinkle the counter with bread flour (about ½ cup). Gently transfer the dough to the floured counter with a plastic dough scraper that has been dipped in cold water, dipping your hands as well to keep the dough from sticking to you. Avoid punching down the dough as you transfer it, to expel as little as possible of the carbon-dioxide gas that has built up in the dough during fermentation. If the dough is very wet, sprinkle more flour over the top as well as under it. Dry your hands thoroughly and then dip them in flour. Roll the dough gently in the sprinkled flour to coat it thoroughly, simultaneously stretching it into an oblong about 8 inches long and 6 inches wide. If it is too sticky to handle, continue sprinkling flour over it. Dip a metal pastry scraper into cool water to keep it from sticking to the dough, and cut the dough in half widthwise with the pastry scraper by pressing it down through the dough until it severs it, then dipping it again in the water and repeating this action until you have cut down the full length of the dough. (Do not use this blade as a saw; use it as a pincer, pinching the dough cleanly with each cut.) Let the dough relax for 5 minutes.

5. Prepare the oven for hearth baking, making sure to have an empty steam pan in place. Preheat the oven to 500 degrees, or 550 degrees if your oven goes this high. Cover the back of two 17-by-12-inch sheet pans with baking parchment. (I just used my pizza peel.) Take one of the dough pieces and repeat the cutting action, but this time cut off 3 equal-sized lengths. Then do the same with the remaining half. This should give you 6 lengths. Flour your hands and carefully lift one of the dough strips and transfer it to an inverted parchment-lined pan, gently pulling it to the length of the pan or to the length of your baking stone. If it springs back, let it rest for 5 minutes and then gently pull it out again. Place 3 strips on the pan, and then prepare another pan and repeat with the remaining strips.

6. Score the dough strips as for traditional baguettes, slashing the tops with 3 diagonal cuts. Because the dough is sticky, you may have to dip the razor blade, serrated knife or scissors in water between each cut. You may also omit the cuts if the dough isn’t cooperating. (I tried cutting, but the dough was so wet that it didn’t seem to make a difference.)

7. Take one pan to the preheated oven and carefully slide the dough, parchment and all, onto the baking stone (depending on the direction of the stone, you may choose to slide the dough and parchment off the side of the sheet pan instead of off the end); or bake directly on the sheet pan. Make sure the pieces aren’t touching (you can reach in and straighten the parchment or the dough strips, if need be). Pour 1 cup of hot water into the steam pan and close the door. After 30 seconds, spray the oven walls with water and close the door. Repeat twice more at 30-second intervals. After the final spray, reduce the oven setting to 475 degrees and continue baking. Meanwhile, dust the other pan of strips with flour, mist with spray oil, and cover with a towel or plastic wrap. If you don’t plan to bake these strips within 1 hour, refrigerate the pan and bake later or the next day.

8. The bread should begin to turn golden brown within 8 or 9 minutes. If the loaves are baking unevenly at this point, rotate them 180 degrees. Continue baking 10 to 15 minutes more, or until the bread is a rich golden brown and the internal temperature registers at least 205 degrees. (I think this is the part that didn’t work for me. I think I should have left it at the high heat and cooked it for only about 15 minutes.)

9. Transfer the hot breads to a cooling rack. They should feel very light, almost airy, and will cool in about 20 minutes. While these are cooling, you can bake the remaining loaves, remembering to remove the parchment from the oven and turn the oven up to 500 degrees or higher before baking the second round.
