There’s something about spring, and I don’t know what it is. I didn’t even think we’d get it here in the desert. Is it a smell? Is it the mourning doves? I do love their call. Maybe it’s the angle of the light, as our northern hemisphere leans more and more toward the sun.

Whatever it is, spring is in the air. Spring in southern New Mexico means eighty degree days and crossing your fingers it isn’t too windy out to enjoy the sun. Early spring where you are might mean you’re seeing some patches of ground through the snow. Either way, these bright citrusy muffins are the perfect complement to that spring feeling.

Lauryn chose these muffins for Tuesdays with Dorie and has the recipe posted. I increased the salt to ½ teaspoon and substituted the quarter cup of orange juice that I was short with a mixture of lemon juice and water.

shrimp canapes a la suede

I don’t live the kind of lifestyle that includes a lot of canapés. Maybe that’s because canapés went out of style fifty years ago. Or maybe I need to start labeling any “toasts topped with stuff” as canapés, because I’ve eaten plenty of those. More precisely, canapés are “toasts fussily topped with stuff”. And since when do I not appreciate fussy?

These particular canapés include the unbeatable combination of bread, salted butter, shrimp, dill, mayonnaise and lemon. While there’s no cooking (assuming you buy pre-cooked shrimp), the assembly may take a while, because remember, fussiness is an essential aspect of making canapés.

Since I apparently don’t go to enough events where canapés are served, I will make them for a virtual event – a bridal shower for my fellow desert blogger (although her Sonoran desert trumps my Chihuahuan desert), Kelsey, who’s getting married next week. Kelsey is one of the most kind and beautiful women I know, and I wish every happiness upon her. I would love to shower her with well wishes in real life, but this virtual bridal shower will have to do.  The advantage of a virtual party, of course, is that I got to eat all the canapés myself. The disadvantage is that I didn’t get to eat everyone else’s contributions.

Shrimp Canapés à la Suede (tweaked from Amanda Hesser’s The Essential New York Times Cookbook)

The slivers of lemon tucked under each canapé are very cute, but not entirely practical. The brightness of lemon was important part of this flavor combination, however, so it might make more sense to forget the wedges and simply squeeze some lemon over the shrimp before adding the mayonnaise and dill.

Makes 12 appetizers

12 (2-inch) rounds of bread, sliced ¼-inch thick
Salted butter, softened
12 medium shrimp, cooked and sliced lengthwise (to make two symmetrical spirals)
Mayonnaise
12 small dill sprigs
Freshly ground black pepper
12 small lemon wedges

Toast the bread until lightly browned; let cool. Butter the toast rounds and top each with two shrimp halves. Garnish the canapés with mayonnaise stars pressed from a pastry bag (or just dollop a scant ½ teaspoon on each). Top with the dill springs and season with pepper. Serve with lemon wedges.

almond biscotti

When faced with three bowls of Bolognese and a spoon, Dave declared them all good. “Different, but good.” Which is better? “I don’t know. They’re all good.” Carne adovada? “They all taste the same.” Sugar cookies? “They need frosting.”

I can’t really complain about having someone to cook for who appreciates everything I make (unless it has olives), but feedback isn’t Dave’s strongpoint. He used to tell me that he could only give a good opinion if he was served similar dishes side-by-side, which started this whole thing, but not even that always works.

Unless it concerns almond biscotti. I have made at least four almond biscotti recipes, over the course of well over a year, and Dave has unequivocally identified his favorite. It was the first I tried, and nothing else has ever lived up. He loves these because they’re just crunchy enough to dip into his coffee without getting soggy, but not so crisp that they’re a challenge to bite into.

I like them because the recipe is simple to mix up and is easily adaptable. Usually I use slivered blanched almonds, but if I need to use up sliced almonds, those work just fine as well. If I’m in the mood for variety, I can add different nuts and dried fruit, although if I do, Dave will be disappointed. Pure, unadulterated almond biscotti is one of Dave’s favorites, up there with banana cream pie and salmon pesto pasta. At least this recipe is.

Almond Biscotti (adapted from Bon Appetit via Smitten Kitchen)

There’s no need to toast the nuts before mixing the dough; they’ll brown in the oven.

You’ll only use a bit of the egg white, plus I dislike using only one part of an egg. Instead, I steal just a bit of egg white from one of the eggs that gets mixed into the dough to use for the egg wash instead of using a separate egg white.

1 large egg white
3¼ cups (15.6 ounces) all-purpose flour
1 tablespoon baking powder
3 large eggs
10 tablespoons (1¼ sticks) unsalted butter, melted
1/3 teaspoon salt
1½ cups (10.5 ounces) sugar
1 tablespoon vanilla extract
1 tablespoon Grand Marnier or orange liqueur
1 tablespoon orange zest
1 cup slivered or sliced almonds

1. Heat the oven to 350 degrees. Line a large baking sheet with parchment paper or a silicone mat. Whisk the single egg white until frothy. In a medium bowl or large measuring cup, mix the flour and baking powder.

2. In a large pot over medium-low heat, heat the butter just until melted. Remove the pot from the heat; stir in the sugar and salt. Stir in the eggs, one at time; add the extract, liqueur, and zest. Slowly mix in the flour mixture, then the almonds.

3. Divide the dough in half. On the prepared baking sheet, shape each half into a log 2-inches across and ¾-inch high. Brush with the egg white. Bake for 30 minutes, until puffed and golden.

4. Carefully transfer the logs to a cooling rack (I use two large spatulas for this); cool for 30 minutes.

5. Slice each log on the diagonal into ½-inch thick cookies. Lay half of the cookies cut side down on the baking sheet. Bake 11 minutes; remove the pan from the oven and, using tongs, turn each cookie over onto its other cut side. Bake 7 minutes, until the edges are browned. Transfer to a cooling rack. Repeat with the remaining cookies.

I have blogged about this recipe before. At the time, I could only tell you that they were good. Now I can tell you that they are the best.

nutty chocolately swirly sour cream bundt cake

I’ve got nothing against nuts and chocolate and currants, but you know what I really like best? Cake made with sour cream. For me, it always comes back to the purest form of flour plus butter plus sugar, and adding a tangy fatty dairy into the mix just makes things better. Usually that’s cream cheese, but I have nothing against sour cream either.

I’ve been doing a better job of reining in my batter-eating, but the few spoonfuls I had of this cake’s batter made me crave a bowl of the stuff, a quiet corner, and a cup of coffee. It also made me wish I had more sour cream cake. The swirl was fun, but all I really want is the cake part. Or the batter part.

In winter, when berries and melons aren’t even on the horizon and you’ve had all you can take of apples and pears, it’s all about citrus. What’s more, the bright flavors and colors of citrus mimic the sunshine we’re missing.

Well, the sunshine you’re missing. Here in southern New Mexico, it was 80 degrees yesterday, and I used some of that winter citrus for something quintessentially summery – a margarita.

But the occasional warm day in January doesn’t mean we have fresh-picked strawberries and peaches for sale, so lemons are still a good bet for muffins, not to mention that it’s one of my favorite flavors. Combined with the crunch of poppy seeds, these little treats will be perfect any time of the year – but maybe not as an accompaniment to that margarita.

Betsy chose this for Tuesdays with Dorie, and she has the recipe posted. I doubled the salt (as usual).  I also skipped the glaze (because frosting on muffins = cupcakes).  Instead, I brought a mixture of lemon juice and granulated sugar to a simmer, then brushed that on the warm muffins.

I can’t deny that quality matters when it comes to food. I know I’m lucky in this small town that I can buy the ingredients I can – Greek yogurt, dried currants, and free range eggs are all items that my grocery store has started carrying since we moved here last year. (Soy yogurt and King Arthur whole wheat flour are ingredients they’ve stopped carrying, unfortunately.) But there just isn’t a market here for all the ingredients I wish I could buy. And that’s why I stock up on cheese and chocolate when we visit my parents in Albuquerque.

I made this recipe once with swiss cheese I bought in the grocery store here. It might even have called itself gruyere. And the pasta was fine. Not thrilling, but nice. But I couldn’t wrap my head around how something with this combination of ingredients – pasta, fresh herbs, feta, shrimp, and gruyere – could not be thrilling.

When I tried again with gruyere I got at Whole Foods in Albuquerque, it was a whole different dish. This time it was everything I had expected originally, with bright fresh lemon and dill, sweet shrimp, and pungent gruyere melted around swirls of pasta. Just like the good coffee is less acidic and good chocolate tastes deeper, good cheese makes better macaroni and cheese.

Shrimp and Feta Macaroni and Cheese (adapted from The Perfect Pantry via Annie’s Eats)

½ cup panko breadcrumbs
10 ounces feta cheese, crumbled and divided
zest of 1 lemon, divided
2 tablespoons fresh parsley, chopped, divided
5 tablespoons butter, divided
salt
1 pound pasta
1 pound raw shrimp (31-40 ct.), peeled and deveined, cut in half (if desired)
4 tablespoons all-purpose flour
3 cups milk
2 tablespoons fresh dill, chopped
8 ounces Gruyere cheese, shredded (about 2 cups)
½ teaspoon kosher salt
½ teaspoon ground black pepper

1. Preheat the oven to 400˚ F. In a small bowl, combine the panko, a quarter of the feta, a pinch of lemon zest, 2 teaspoons of the parsley and 1 tablespoon of the butter, melted. Toss with a fork to combine; set aside.

2. Bring a large pot of salted water to a boil. Cook the pasta until al dente according to the package directions. Drain, then transfer the pasta back to the cooking pot. Add the raw shrimp to the warm pasta; combine.

3. In a medium saucepan, melt the remaining 4 tablespoons of butter over medium-high heat; whisk in the flour. Cook 1-2 minutes, whisking constantly, until light golden brown. Whisk in the milk. Cook, stirring frequently, over medium heat until the sauce bubbles and thickens, about 5 minutes. Remove the pot from the heat and stir in the remaining feta, Gruyere, remaining parsley, remaining lemon zest, dill, salt and pepper. Pour the sauce over the pasta and shrimp; stir well to coat.

4. Transfer the mixture to a lightly greased 2½ or 3-quart baking dish. Sprinkle the breadcrumb mixture evenly over the top. Bake for 20-25 minutes, until lightly browned and bubbling. Remove from the oven and let cool 5-10 minutes before serving.

If you top cake with buttery sugary crumbs instead of buttery sugary frosting, suddenly it’s breakfast! Not that I’m complaining, mind you. And not that crumbs on top will stop me from eating it for dessert as well as breakfast.

It’s called cardamom cake, but cardamom isn’t the only important flavor. Orange zest in both the crumb and cake compete with coffee, and the orange wins but isn’t too strong. I suppose I wouldn’t have been opposed to more spice or even more bitter coffee, but the cake seemed pretty perfect just how it was. And really, what could be better than cake for breakfast?

It sounds plain, doesn’t it? What exactly is offering the flavor here? Is a bowl of carbs, green vegetables and nuts worth eating?

Because there aren’t many ingredients, it’s important to maximize each one. Browning food is key for developing flavor, so that means toasting the nuts and pan-roasting the Brussels sprouts. Plenty of garlic and a pinch of spicy red pepper flakes add another layer of interest. A generous handful of parmesan glues the sauce together, both in texture and taste.

It isn’t much, as you can see. But what it lacks in ingredients – and, therefore, ingredient prep – it makes up for in flavor. It’s a simple dish, but a healthy one that might surprise you by adding up to far more than its individual components hint at.

Pasta with Brussels Sprouts and Pine Nuts (adapted from Gourmet via epicurious)

Please note the very important “reserve a cup of pasta cooking water” step! I sometimes forget, but I’ve found that putting a measuring cup in the colander will remind me to scoop up some water when it’s time to drain the pasta.

If you have bacon fat (or better yet, pancetta fat, which is what I used) available, I highly recommend it. Because there aren’t a lot of ingredients here, the more flavorful each one is, the better. If that sounds too rich for your blood, using olive oil certainly won’t spoil your dish. One tablespoon will be enough if you’re being stingy, but you’ll have better browning of the sprouts with two.

Pasta dishes like this don’t have a high heat capacity. To keep dinner warm until I’m finished eating, I like to warm the serving bowls in the oven while the pasta is cooking.

12 ounces pasta (rotini or another open short shape)
salt and freshly ground black pepper
3 ounces (¼ cup) pine nuts
24 ounces Brussels sprouts, trimmed and quartered
1-2 tablespoons butter, olive oil, or bacon fat
4 cloves garlic, minced
½ teaspoon crushed red pepper flakes
¼ cup water
juice of 1 lemon
2 ounces (1 cup) freshly grated parmesan

1. Bring a large pot of water to a boil over high heat. When it boils, add a tablespoon of salt and the pasta. Cook according to the package directions. Drain, reserving about a cup of the pasta cooking water.

2. Meanwhile, heat a 12-inch not-nonstick skillet over medium heat. Add the nuts; cook and stir until fragrant and lightly toasted, 1-2 minutes. Transfer to nuts to a small bowl; set aside.

3. Add the fat to the now-empty skillet and heat over medium heat. Add the Brussels sprouts and a big pinch of salt; cook without stirring for 2 minutes. Stir; repeat the cooking and stirring twice more, for a total of 6 minutes. Push the sprouts to the edge of the pan and add the garlic and pepper flakes to the cleared center; cook and stir constantly until fragrant, about 30 seconds. Stir into the sprouts.

4. Add the water to the pan; immediately cover and continue cooking for 2 minutes. Remove the lid, scrape up any browned bits on the bottom of the pan, and let any remaining liquid evaporate.

5. Add the drained pasta, Brussels sprouts mixture, lemon juice, and ½ cup of pasta cooking water to the pot the pasta was cooked in. Stirring continuously, sprinkle the parmesan over the pasta, adding more pasta cooking water if necessary to keep the mixture from drying out. Adjust the seasoning with salt and pepper if necessary; serve immediately, preferably in warmed bowls.

I used to have a friend who always served steamed broccoli with her lasagna. “Everyone does salad with their lasagna”, she scoffed. But it seems to me that everyone does it because it works so well.

Cranberry and orange are another combination that is classic simply because it’s good. Cranberry and lime…well, I don’t know, because I wasn’t brave enough to try it. I do love tart foods, but since I knew I’d be sharing these, I took the safe and familiar route with cranberry and orange.

And it tasted just as good as I expected. I’m almost positive the cranberry-lime variation would have been wonderful too. Of course I can’t be sure, having taken the safe route.

The sisters of Celestial Confections chose this galette for Tuesdays with Dorie, and they have the recipe posted. Make minis at your own time-consuming risk, by cutting 3-inch circles from the rolled dough and stuffing them in muffin cups before filling. Don’t bother trying to fold the sides in. Bake until bubbling and browned, 18-20 minutes.  Also, I used this galette dough, because I already had some in the freezer.  I suspect its malleability helps with maneuvering the dough circles into muffin cups.

green chile mayonnaise

Jen calls this New Magic Awesome Sauce, but I would beg to differ. I like to think of it as New Mexico Awesome Sauce. After all, it’s based on our signature ingredient, the green chile.

To be honest, I was worried about Dave’s reception of this stuff. Dave and green chile is like me and chocolate chip cookie dough. When we were peeling our mountain of roasted chiles back in September, he had a one-for-the-freezer-one-for-my-belleh mentality.

When I mixed green chile with mayonnaise, garlic, and lime juice, I diluted it from its pure state. How dare I! I gave Dave a bit to taste, and his opinion was, of course, more green chile! In the end, I ended up doubling the green chile in the sauce, but this is really a to-taste kind of thing.

What I forgot to consider in my concern over Dave’s opinion was that he’s happy whenever green chile is added to something. The same goes with garlic. The lime juice rounds out the flavors in this gutsied up mayonnaise, and besides, what’s to stop us from smearing more green chile right on top our New Mexico Awesome Sauce to make the ultimate green chile cheeseburger?

Green Chile Mayonnaise (adapted from The Border Cookbook via Use Real Butter)

Makes about ½ cup

I realized when I went to mix up the sauce that I hadn’t roasted any garlic. Not interested in heating the oven for one or two cloves, I toasted it instead. Simply heat a dry not-nonstick pan over medium to medium-high heat and place the unpeeled garlic in it. Turn the cloves every few minutes until the peels are blackened in spots. It softens the flavor, although it won’t be as sweet as fully roasted garlic.

What, your local grocery store doesn’t sell bushels of Hatch green chiles in the fall, with a drum grill in the parking lot for roasting? Poor you. There are several good online sources, or you could perhaps try the little 4-ounce cans, or you could try using roasted and peeled Anaheim or poblano chiles instead. It won’t be the same, but it won’t be bad.

¼ cup roasted green chile, skinned and de-seeded
1 clove garlic, toasted and peeled
2 tablespoons fresh lime juice
½ cup mayonnaise

Add all of the ingredients into the bowl of a food processor or blender; puree. Chill for at least an hour before serving.
