If a recipe includes weight measurements instead of or in addition to volume measurements, I use them. If a recipe does not include weight measurements, I measure by volume using the following equivalents:
all-purpose flour: 1 cup = 4.8 ounces
white and brown sugar: 1 cup = 7 ounces
powdered sugar: 1 cup = 4 ounces
shredded cheese: 1 cup = 4 ounces
grated parmesan cheese: 1 cup = 2 ounces
Unless otherwise specified, degrees are in Fahrenheit.
I categorize a dish as vegetarian even if it requires chicken broth; I assume a vegetarian cook would have a favorite vegetable broth to substitute.
I categorize a recipe as weeknight-friendly if it can be made in less than 45 minutes. Most of these dishes can be made in 30 minutes or less.
I have no quantification for recipes I categorize as healthy. Healthy, to me, means a dish is based on whole grains, lean proteins, minimal cooking fats, and minimum sugar.
